Create your cookies by dipping the double rosette and timbale iron with your chosen rosette or timbale cast designs into hot oil, then into a simple batter, and then back to the hot oil to quickly fry them until golden brown. Next, use a fork to gently remove the rosettes or timbales from the iron and drain them on paper towels. Finally, sprinkle the rosettes with sugar and fill the timbales with custard, fruit, pudding, or savory fillings.
