Similar to black tea, regular rooibos undergoes an oxidation process which turns the needle-like leaves a rich red-brown color and gives it a sweet, full-bodied, and slightly nutty flavor profile. In contrast, green rooibos is unoxidized; the leaves are treated with heat shortly after picking to halt oxidation, preserving their natural green color. This minimal processing results in a lighter, fresher, and more herbaceous brew with grassy notes, while still maintaining the naturally caffeine-free and antioxidant-rich qualities of the plant.
